Ingredients
- 4 eggs
- 2 onions, finely chopped
- 3 tomatoes, pureed
- 1/2 cup mustard oil
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon cumin seeds
- 1 teaspoon ginger-garlic paste
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Boil the eggs, peel them, and set aside.
- Heat mustard oil in a pan and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
- Add ginger-garlic paste and sauté for a minute. Then, add the tomato puree, turmeric powder, red chili powder, and salt. Cook until the oil separates from the masala.
- Add 1 cup of water and bring it to a boil. Gently place the boiled eggs in the curry and simmer for 5-7 minutes.
- Garnish with fresh coriander leaves and serve hot with steamed rice.
