Kosu Bilahi Mankho (assamese Style Egg Curry)

Ingredients

  • 4 eggs
  • 2 onions, finely chopped
  • 3 tomatoes, pureed
  • 1/2 cup mustard oil
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon ginger-garlic paste
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Boil the eggs, peel them, and set aside.
  2. Heat mustard oil in a pan and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
  3. Add ginger-garlic paste and sauté for a minute. Then, add the tomato puree, turmeric powder, red chili powder, and salt. Cook until the oil separates from the masala.
  4. Add 1 cup of water and bring it to a boil. Gently place the boiled eggs in the curry and simmer for 5-7 minutes.
  5. Garnish with fresh coriander leaves and serve hot with steamed rice.
