Kota Belud Beef Soup

Ingredients

  • 1 kg beef, cut into cubes
  • 2 liters water
  • 2 onions, sliced
  • 3 cloves garlic, minced
  • 2 tomatoes, diced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 stalk lemongrass, smashed
  • 3 slices galangal
  • 1 cinnamon stick
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring the water to a boil.
  2. Add the beef cubes and simmer for 1 hour until the meat is tender.
  3. Add the onions, garlic, tomatoes, carrots, potatoes, lemongrass, galangal, and cinnamon stick. Simmer for another 30 minutes.
  4. Season with salt and pepper to taste.
  5. Serve hot and enjoy!
