Kota Belud Chicken Claypot Rice

Ingredients

  • 2 cups jasmine rice
  • 500g chicken thighs, cut into bite-sized pieces
  • 3 cloves garlic, minced
  • 1 onion, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon ground white pepper
  • 4 cups chicken broth
  • 2 stalks green onions, chopped

Instructions

  1. Rinse the jasmine rice and drain well. Place it in the claypot.
  2. Arrange the chicken pieces on top of the rice.
  3. Spread the minced garlic and sliced onion over the chicken.
  4. In a small bowl, mix together the soy sauce, oyster sauce, sesame oil, and white pepper. Pour the mixture over the chicken and rice.
  5. Pour the chicken broth into the claypot.
  6. Cover the claypot and cook over medium heat for 30-35 minutes, or until the rice is tender and the chicken is cooked through.
  7. Sprinkle chopped green onions over the cooked rice and chicken before serving.
