Kota Kinabalu Chicken Satay

Ingredients

  • 1 kg chicken breast, cut into cubes
  • 1 cup coconut milk
  • 4 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon turmeric powder
  • 1 teaspoon ground coriander
  • 1 teaspoon cumin
  • 2 cloves garlic, minced
  • 1 onion, finely chopped
  • Wooden skewers, soaked in water

Instructions

  1. In a bowl, combine coconut milk, soy sauce, brown sugar, turmeric powder, ground coriander, cumin, garlic, and onion to make the marinade.
  2. Add the chicken cubes to the marinade and let it sit for at least 1 hour in the refrigerator.
  3. Thread the marinated chicken onto the soaked skewers.
  4. Preheat the grill to medium-high heat and lightly oil the grate.
  5. Grill the chicken skewers for 3-4 minutes on each side, or until fully cooked and slightly charred.
