Kothimbir Vadi (कोथिंबीर वडी)

Ingredients

  • 2 cups fresh coriander leaves, finely chopped
  • 1 cup chickpea flour (besan)
  • 1 tsp ginger, grated
  • 1 green chili, finely chopped
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1/2 tsp cumin seeds
  • 1/2 tsp sesame seeds
  • Salt to taste
  • Oil for greasing and frying
  • Water as needed

Instructions

  1. In a mixing bowl, combine the chopped coriander leaves, chickpea flour, ginger, green chili, turmeric powder, red chili powder, cumin seeds, sesame seeds, and salt.
  2. Add water gradually to form a thick batter.
  3. Grease a shallow pan with oil and spread the batter evenly in the pan.
  4. Steam the batter for 15-20 minutes until it sets and becomes firm.
  5. Allow it to cool, then cut it into squares or diamonds.
  6. Heat oil in a pan and shallow fry the cut pieces until they turn golden and crispy.
  7. Remove from the pan and place on a paper towel to remove excess oil.
  8. Serve hot with chutney or ketchup.
