कोथिंबीर वडी (Kothimbir Wadi) is a popular Maharashtrian snack made with fresh coriander leaves, gram flour, and spices. It is a crispy and savory dish that is perfect for tea-time or as an appetizer.
Ingredients
- 2 cups fresh coriander leaves, finely chopped
- 1 cup gram flour (besan)
- 1 small onion, finely chopped
- 2-3 green chilies, finely chopped
- 1 tsp ginger-garlic paste
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp cumin seeds
- 1/2 tsp coriander powder
- Salt to taste
- Oil for frying
Instructions
- In a mixing bowl, combine the chopped coriander leaves, gram flour, chopped onion, green chilies, ginger-garlic paste, turmeric powder, red chili powder, cumin seeds, coriander powder, and salt. Mix well to form a thick batter.
- Heat oil in a pan for frying.
- Spread the batter evenly in the pan and let it cook on low heat for 10-12 minutes until the bottom is golden brown.
- Flip the wadi and cook the other side for another 8-10 minutes until crispy and golden brown.
- Remove from the pan and drain excess oil on a paper towel.
- Cut into squares and serve hot with chutney or ketchup.
