Kothimbir Wadi (कोथिंबीर वडी)

Ingredients

  • 2 cups fresh coriander leaves, finely chopped
  • 1 cup gram flour (besan)
  • 1 small onion, finely chopped
  • 2-3 green chilies, finely chopped
  • 1 tsp ginger-garlic paste
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp cumin seeds
  • 1/2 tsp coriander powder
  • Salt to taste
  • Oil for frying

Instructions

  1. In a mixing bowl, combine the chopped coriander leaves, gram flour, chopped onion, green chilies, ginger-garlic paste, turmeric powder, red chili powder, cumin seeds, coriander powder, and salt. Mix well to form a thick batter.
  2. Heat oil in a pan for frying.
  3. Spread the batter evenly in the pan and let it cook on low heat for 10-12 minutes until the bottom is golden brown.
  4. Flip the wadi and cook the other side for another 8-10 minutes until crispy and golden brown.
  5. Remove from the pan and drain excess oil on a paper towel.
  6. Cut into squares and serve hot with chutney or ketchup.
