Kothu Roti (spicy Sri Lankan Chicken Kottu Roti)

Kothu Roti, also known as Sri Lankan Chicken Kottu Roti, is a popular street food in Sri Lanka. This spicy and flavorful dish is made with shredded roti, vegetables, and chicken, all stir-fried together with aromatic spices.

Kothu Roti (spicy Sri Lankan Chicken Kottu Roti)

Ingredients

  • 4 roti breads, shredded
  • 2 chicken breasts, cooked and shredded
  • 1 onion, finely chopped
  • 2 green chilies, chopped
  • 1 carrot, julienned
  • 1 bell pepper, thinly sliced
  • 2 eggs, beaten
  • 2 tablespoons curry powder
  • 1 teaspoon chili powder
  • 1 teaspoon turmeric
  • 1 teaspoon cumin seeds
  • 1 teaspoon black pepper
  • 1/4 cup chopped fresh cilantro
  • Salt to taste
  • 2 tablespoons vegetable oil

Instructions

  1. Heat oil in a large pan or griddle over medium heat.
  2. Add the chopped onion and green chilies, and sauté until the onion is translucent.
  3. Add the shredded roti, cooked chicken, carrot, and bell pepper to the pan. Stir well to combine.
  4. Push the mixture to one side of the pan and pour the beaten eggs onto the empty side. Scramble the eggs until cooked, then mix them into the roti mixture.
  5. Add the curry powder, chili powder, turmeric, cumin seeds, black pepper, and salt to the pan. Stir well to evenly distribute the spices.
  6. Cook for an additional 5-7 minutes, stirring frequently, until the roti is heated through and the flavors are well combined.
  7. Garnish with chopped cilantro before serving.
