Kothu Roti (spicy Sri Lankan Chicken Kottu Roti)
Kothu Roti, also known as Sri Lankan Chicken Kottu Roti, is a popular street food in Sri Lanka. This spicy and flavorful dish is made with shredded roti, vegetables, and chicken, all stir-fried together with aromatic spices.
Ingredients
- 4 roti breads, shredded
- 2 chicken breasts, cooked and shredded
- 1 onion, finely chopped
- 2 green chilies, chopped
- 1 carrot, julienned
- 1 bell pepper, thinly sliced
- 2 eggs, beaten
- 2 tablespoons curry powder
- 1 teaspoon chili powder
- 1 teaspoon turmeric
- 1 teaspoon cumin seeds
- 1 teaspoon black pepper
- 1/4 cup chopped fresh cilantro
- Salt to taste
- 2 tablespoons vegetable oil
Instructions
- Heat oil in a large pan or griddle over medium heat.
- Add the chopped onion and green chilies, and sauté until the onion is translucent.
- Add the shredded roti, cooked chicken, carrot, and bell pepper to the pan. Stir well to combine.
- Push the mixture to one side of the pan and pour the beaten eggs onto the empty side. Scramble the eggs until cooked, then mix them into the roti mixture.
- Add the curry powder, chili powder, turmeric, cumin seeds, black pepper, and salt to the pan. Stir well to evenly distribute the spices.
- Cook for an additional 5-7 minutes, stirring frequently, until the roti is heated through and the flavors are well combined.
- Garnish with chopped cilantro before serving.
