Ingredients
- 1 whole chicken, about 4 lbs
- 2 lemons, juiced and zested
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 1 tbsp fresh thyme, chopped
- 1 tbsp fresh rosemary, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a small bowl, mix together the lemon juice, lemon zest, minced garlic, olive oil, thyme, rosemary, salt, and pepper.
- Place the chicken in a roasting pan and rub the lemon and herb mixture all over the chicken, including under the skin and inside the cavity.
- Roast the chicken in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown and crispy.
- Let the chicken rest for 10 minutes before carving and serving.
