Kotor Bay Stuffed Peppers

Ingredients

  • 4 large bell peppers
  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup tomato sauce
  • 1/2 cup beef or vegetable broth
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, mix together the ground beef, cooked rice, onion, garlic, paprika, oregano, salt, and pepper.
  4. Stuff the bell peppers with the meat mixture and place them in a baking dish.
  5. In a separate bowl, mix together the tomato sauce and broth. Pour the mixture over the stuffed peppers.
  6. Cover the baking dish with foil and bake for 30 minutes.
  7. Remove the foil, sprinkle the grated Parmesan cheese over the peppers, and bake for an additional 10 minutes until the cheese is melted and bubbly.
