Koucha is a traditional Tunisian stew made with tender lamb and hearty potatoes, simmered in a flavorful broth of spices and herbs. This comforting dish is perfect for a cozy family dinner or a special occasion.
Ingredients
- 1 lb lamb, cut into chunks
- 4 potatoes, peeled and cubed
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 2 tomatoes, diced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon turmeric
- 1/2 teaspoon cinnamon
- 4 cups chicken or vegetable broth
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the lamb chunks and brown on all sides.
- Add the chopped onion and minced garlic to the pot. Sauté until the onion is soft and translucent.
- Stir in the diced tomatoes, ground cumin, paprika, turmeric, and cinnamon. Cook for a few minutes to release the flavors.
- Add the cubed potatoes to the pot and pour in the chicken or vegetable broth. Season with salt and pepper.
- Bring the stew to a boil, then reduce the heat to low. Cover and simmer for about 2 hours, or until the lamb is tender and the potatoes are cooked through.
- Adjust the seasoning if needed. Serve the koucha hot, garnished with fresh cilantro.
