Ingredients

  • 1 lb lamb, cut into chunks
  • 4 potatoes, peeled and cubed
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 2 tomatoes, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • 1/2 teaspoon cinnamon
  • 4 cups chicken or vegetable broth
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the lamb chunks and brown on all sides.
  2. Add the chopped onion and minced garlic to the pot. Sauté until the onion is soft and translucent.
  3. Stir in the diced tomatoes, ground cumin, paprika, turmeric, and cinnamon. Cook for a few minutes to release the flavors.
  4. Add the cubed potatoes to the pot and pour in the chicken or vegetable broth. Season with salt and pepper.
  5. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for about 2 hours, or until the lamb is tender and the potatoes are cooked through.
