Koukouvagia's Quinoa Salad (Κουκουβάγια)
This Cretan-inspired quinoa salad, known as Κουκουβάγια (Koukouvagia's Quinoa Salad), is a delicious and nutritious dish perfect for a light lunch or a side dish for dinner.
Ingredients
- 1 cup quinoa, rinsed
- 2 cups water
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped
- 1/4 cup Kalamata olives, pitted and chopped
- 1/4 cup crumbled feta cheese
- 1/4 cup fresh parsley, chopped
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- Salt and pepper to taste
Instructions
- In a medium saucepan, bring the quinoa and water to a boil. Reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is tender and the water is absorbed. Fluff with a fork and let it cool.
- In a large bowl, combine the cooked quinoa, cucumber, red bell pepper, red onion, Kalamata olives, feta cheese, and parsley.
- In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper. Pour the dressing over the quinoa salad and toss to coat.
- Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
