Koukouvagia's Quinoa Salad (Κουκουβάγια)

Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup Kalamata olives, pitted and chopped
  • 1/4 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste

Instructions

  1. In a medium saucepan, bring the quinoa and water to a boil. Reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is tender and the water is absorbed. Fluff with a fork and let it cool.
  2. In a large bowl, combine the cooked quinoa, cucumber, red bell pepper, red onion, Kalamata olives, feta cheese, and parsley.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper. Pour the dressing over the quinoa salad and toss to coat.
  4. Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
