Ingredients

  • 2 cups bulgur wheat
  • 1 pound ground beef
  • 1 onion, finely chopped
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste
  • Water
  • Vegetable oil for frying

Instructions

  1. Place the bulgur wheat in a large bowl and cover with water. Let it soak for 10 minutes, then drain and squeeze out any excess water.
  2. In a separate bowl, mix together the ground beef, onion, olive oil, cumin, paprika, cinnamon, salt, and pepper.
  3. Add the bulgur wheat to the meat mixture and combine well. If the mixture is too dry, add a little water to moisten it.
  4. Take a small portion of the mixture and shape it into a small oval or cylindrical shape, then deep fry in hot oil until golden brown and crispy.
  5. Remove the koupes from the oil and place on a paper towel to drain any excess oil.
  6. Serve the koupes hot with a side of tzatziki or hummus for dipping.
