Ingredients

  • 4 large zucchinis
  • 1 cup of rice
  • 300g of ground meat (beef or lamb)
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 tablespoons of tomato paste
  • 1 teaspoon of ground cinnamon
  • 1 teaspoon of ground cumin
  • Salt and pepper to taste
  • 2 tablespoons of olive oil
  • 2 cups of chicken or vegetable broth
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the zucchinis and hollow them out using a spoon, leaving about ¼ inch of flesh. Reserve the zucchini flesh for later use.
  3. In a large bowl, combine the rice, ground meat, chopped onion, diced tomatoes, tomato paste, ground cinnamon, ground cumin, salt, and pepper. Mix well.
  4. Stuff the hollowed zucchinis with the rice and meat mixture, and place them in a deep pot.
  5. Chop the reserved zucchini flesh and scatter it around the stuffed zucchinis in the pot.
  6. Drizzle the olive oil over the stuffed zucchinis and pour the broth into the pot.
  7. Cover the pot and cook the stuffed zucchinis over medium heat for 45-50 minutes, or until the zucchinis are tender and the rice is cooked.
  8. Once cooked, remove the stuffed zucchinis from the pot and place them on a serving dish.
  9. Garnish with fresh parsley and serve hot.
