Kousa Mahshi (armenian Stuffed Zucchini)
Kousa Mahshi is a traditional Armenian dish made with stuffed zucchini. It is a delicious and hearty meal that is perfect for a family dinner or special occasion.
Ingredients
- 4 large zucchinis
- 1 cup of rice
- 1 lb ground beef
- 1 onion, finely chopped
- 1 tomato, diced
- 1/4 cup of fresh parsley, chopped
- 1/4 cup of fresh mint, chopped
- 1 teaspoon of allspice
- 1 teaspoon of cinnamon
- Salt and pepper to taste
- 2 cups of tomato sauce
- 2 cups of chicken broth
Instructions
- Preheat the oven to 375°F.
- Cut the tops off the zucchinis and scoop out the insides, leaving a 1/4-inch shell. Chop the scooped zucchini and set aside.
- In a large bowl, mix the rice, ground beef, chopped onion, tomato, parsley, mint, allspice, cinnamon, salt, and pepper.
- Stuff the zucchinis with the rice and beef mixture.
- Place the stuffed zucchinis in a large pot and add the chopped zucchini, tomato sauce, and chicken broth.
- Cover and cook over medium heat for 1 hour, or until the zucchinis are tender and the filling is cooked through.
- Serve the Kousa Mahshi hot and enjoy!
