Ingredients

  • 4 large zucchinis
  • 1 cup of rice
  • 1 lb ground beef
  • 1 onion, finely chopped
  • 1 tomato, diced
  • 1/4 cup of fresh parsley, chopped
  • 1/4 cup of fresh mint, chopped
  • 1 teaspoon of allspice
  • 1 teaspoon of cinnamon
  • Salt and pepper to taste
  • 2 cups of tomato sauce
  • 2 cups of chicken broth

Instructions

  1. Preheat the oven to 375°F.
  2. Cut the tops off the zucchinis and scoop out the insides, leaving a 1/4-inch shell. Chop the scooped zucchini and set aside.
  3. In a large bowl, mix the rice, ground beef, chopped onion, tomato, parsley, mint, allspice, cinnamon, salt, and pepper.
  4. Stuff the zucchinis with the rice and beef mixture.
  5. Place the stuffed zucchinis in a large pot and add the chopped zucchini, tomato sauce, and chicken broth.
  6. Cover and cook over medium heat for 1 hour, or until the zucchinis are tender and the filling is cooked through.
  7. Serve the Kousa Mahshi hot and enjoy!
