Kousa Mahshi (assyrian Stuffed Zucchini)

Ingredients

  • 8 small zucchinis
  • 1 cup long-grain rice
  • 1 lb ground beef or lamb
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1 teaspoon allspice
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste
  • 2 cups chicken or vegetable broth

Instructions

  1. Preheat the oven to 375°F.
  2. Cut off the tops of the zucchinis and hollow them out using a spoon, leaving about 1/4 inch of flesh. Reserve the zucchini pulp.
  3. Rinse the rice under cold water and drain.
  4. In a large bowl, mix the rice, ground meat, onion, tomatoes, parsley, mint, allspice, cinnamon, salt, and pepper. Add the reserved zucchini pulp and mix well.
  5. Stuff the hollowed zucchinis with the rice and meat mixture, leaving a little space at the top for the rice to expand.
  6. Place the stuffed zucchinis in a large pot and pour the broth over them. Cover the pot and cook over medium heat for 45-50 minutes, or until the zucchinis are tender and the rice is cooked.
  7. Serve the Kousa Mahshi hot with a side of yogurt or salad.
