Kousa Mahshi (assyrian Stuffed Zucchini)
Kousa Mahshi is a traditional Assyrian dish made with zucchinis stuffed with a flavorful mixture of rice, ground meat, and spices. It's a delicious and comforting dish that is perfect for a family meal or special occasion.
Ingredients
- 8 small zucchinis
- 1 cup long-grain rice
- 1 lb ground beef or lamb
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1 teaspoon allspice
- 1/2 teaspoon cinnamon
- Salt and pepper to taste
- 2 cups chicken or vegetable broth
Instructions
- Preheat the oven to 375°F.
- Cut off the tops of the zucchinis and hollow them out using a spoon, leaving about 1/4 inch of flesh. Reserve the zucchini pulp.
- Rinse the rice under cold water and drain.
- In a large bowl, mix the rice, ground meat, onion, tomatoes, parsley, mint, allspice, cinnamon, salt, and pepper. Add the reserved zucchini pulp and mix well.
- Stuff the hollowed zucchinis with the rice and meat mixture, leaving a little space at the top for the rice to expand.
- Place the stuffed zucchinis in a large pot and pour the broth over them. Cover the pot and cook over medium heat for 45-50 minutes, or until the zucchinis are tender and the rice is cooked.
- Serve the Kousa Mahshi hot with a side of yogurt or salad.
