Ingredients

  • 4 medium-sized zucchinis
  • 1 pound ground lamb
  • 1 cup long-grain white rice
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 tablespoons tomato paste
  • 1 teaspoon allspice
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • Salt and pepper to taste
  • 2 cups chicken or vegetable broth
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the zucchinis by cutting off the tops and hollowing them out with a spoon, leaving about 1/4 inch of flesh. Set aside.
  3. In a mixing bowl, combine the ground lamb, rice, onion, tomatoes, tomato paste, allspice, cinnamon, nutmeg, salt, and pepper. Mix well.
  4. Stuff the hollowed zucchinis with the lamb and rice mixture, leaving a little space at the top for the rice to expand.
  5. Place the stuffed zucchinis in a deep pot and pour the chicken or vegetable broth over them. Cover the pot and cook on the stovetop over medium heat for 1 hour, or until the zucchinis are tender and the filling is cooked through.
  6. Once cooked, remove the stuffed zucchinis from the pot and place them on a serving dish. Garnish with fresh parsley.
