Ingredients
- 4 medium-sized zucchinis
- 1 pound ground lamb
- 1 cup long-grain white rice
- 1 onion, finely chopped
- 2 tomatoes, diced
- 2 tablespoons tomato paste
- 1 teaspoon allspice
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- Salt and pepper to taste
- 2 cups chicken or vegetable broth
- Fresh parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Prepare the zucchinis by cutting off the tops and hollowing them out with a spoon, leaving about 1/4 inch of flesh. Set aside.
- In a mixing bowl, combine the ground lamb, rice, onion, tomatoes, tomato paste, allspice, cinnamon, nutmeg, salt, and pepper. Mix well.
- Stuff the hollowed zucchinis with the lamb and rice mixture, leaving a little space at the top for the rice to expand.
- Place the stuffed zucchinis in a deep pot and pour the chicken or vegetable broth over them. Cover the pot and cook on the stovetop over medium heat for 1 hour, or until the zucchinis are tender and the filling is cooked through.
- Once cooked, remove the stuffed zucchinis from the pot and place them on a serving dish. Garnish with fresh parsley.
