Ingredients

  • 4 large zucchinis
  • 1 cup long-grain rice
  • 250g ground beef or lamb
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 tablespoons tomato paste
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground allspice
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste
  • 2 cups chicken or vegetable broth

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the zucchinis and hollow them out using a spoon, leaving about 1/4 inch of flesh. Reserve the zucchini pulp for later use.
  3. Rinse the rice under cold water until the water runs clear, then drain.
  4. In a bowl, mix the ground meat, chopped onion, diced tomatoes, tomato paste, rice, cinnamon, allspice, parsley, salt, and pepper.
  5. Stuff the hollowed zucchinis with the meat and rice mixture, leaving a little space at the top for the rice to expand.
  6. Place the stuffed zucchinis in a deep pot and arrange them snugly to prevent them from falling over during cooking.
  7. Pour the chicken or vegetable broth over the zucchinis, covering them completely.
  8. Cover the pot and cook over medium heat for 45-50 minutes, or until the zucchinis are tender and the rice is fully cooked.
  9. Remove the pot from the heat and let the stuffed zucchinis rest for 10 minutes before serving.
