Ingredients

  • 4 large zucchinis
  • 1 cup long-grain rice
  • 250g ground beef
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 tablespoons tomato paste
  • 2 tablespoons olive oil
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground allspice
  • Salt and pepper to taste
  • 2 cups chicken or vegetable broth

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the zucchinis and scoop out the flesh to create a hollow cavity. Set aside.
  3. In a bowl, mix the rice, ground beef, onion, tomatoes, tomato paste, olive oil, cinnamon, allspice, salt, and pepper.
  4. Stuff the hollowed zucchinis with the rice and beef mixture.
  5. Place the stuffed zucchinis in a deep pot and pour the broth over them.
  6. Cover the pot and cook on the stovetop over medium heat for 45-50 minutes, or until the zucchinis are tender and the rice is cooked.
  7. Serve the Kousa Mahshi hot and enjoy!
