Kousa Mahshi is a traditional Qatari dish of stuffed zucchini with spiced rice and ground beef. This flavorful and aromatic dish is a popular choice for family gatherings and special occasions.
Ingredients
- 4 large zucchinis
- 1 cup long-grain rice
- 250g ground beef
- 1 onion, finely chopped
- 2 tomatoes, diced
- 2 tablespoons tomato paste
- 2 tablespoons olive oil
- 1 teaspoon ground cinnamon
- 1 teaspoon ground allspice
- Salt and pepper to taste
- 2 cups chicken or vegetable broth
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the zucchinis and scoop out the flesh to create a hollow cavity. Set aside.
- In a bowl, mix the rice, ground beef, onion, tomatoes, tomato paste, olive oil, cinnamon, allspice, salt, and pepper.
- Stuff the hollowed zucchinis with the rice and beef mixture.
- Place the stuffed zucchinis in a deep pot and pour the broth over them.
- Cover the pot and cook on the stovetop over medium heat for 45-50 minutes, or until the zucchinis are tender and the rice is cooked.
- Serve the Kousa Mahshi hot and enjoy!
