Kousa Mahshi (yemeni Spiced Stuffed Zucchini)

Ingredients

  • 4 large zucchinis
  • 1 pound ground beef or lamb
  • 1 cup long-grain rice
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • Salt and pepper to taste
  • 2 cups chicken or vegetable broth
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the zucchinis and scoop out the flesh, leaving about 1/4 inch thick shell. Chop the scooped zucchini flesh and set aside.
  3. In a large bowl, combine the ground meat, rice, chopped zucchini flesh, onion, tomatoes, garlic, cumin, coriander, cinnamon, salt, and pepper. Mix well.
  4. Stuff the zucchinis with the meat and rice mixture, and place them in a deep pot or Dutch oven.
  5. Pour the chicken or vegetable broth over the stuffed zucchinis, drizzle with olive oil, and cover the pot.
  6. Cook on the stovetop over medium heat for 45-50 minutes, or until the zucchinis are tender and the filling is cooked through.
  7. Serve the Kousa Mahshi hot, garnished with fresh herbs and accompanied by rice or flatbread.
