Ingredients

  • 2 cups couscous

  • 2 zucchinis, sliced
  • 1 bell pepper, diced
  • 1 cup chickpeas, cooked
  • 3 tomatoes, chopped
  • 3 cloves garlic, minced
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  2. Add the diced carrots, sliced zucchinis, diced bell pepper, and chickpeas to the pot. Cook for 5 minutes, stirring occasionally.
  3. Stir in the ground cumin, ground coriander, and turmeric, and cook for another 2 minutes to toast the spices.
  4. Add the chopped tomatoes and vegetable broth to the pot. Season with salt and pepper, then bring the mixture to a boil.
  5. Once boiling, reduce the heat to low and simmer for 30 minutes, allowing the vegetables to soften and the flavors to meld.
  6. While the vegetables are simmering, prepare the couscous according to the package instructions.
  7. Fluff the cooked couscous with a fork and divide it among serving plates. Ladle the vegetable mixture over the couscous and serve hot.
