Ingredients
- 2 cups couscous
- 1 onion, chopped
- 2 carrots, diced
- 2 zucchinis, sliced
- 1 bell pepper, diced
- 1 cup chickpeas, cooked
- 3 tomatoes, chopped
- 3 cloves garlic, minced
- 2 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 4 cups vegetable broth
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the diced carrots, sliced zucchinis, diced bell pepper, and chickpeas to the pot. Cook for 5 minutes, stirring occasionally.
- Stir in the ground cumin, ground coriander, and turmeric, and cook for another 2 minutes to toast the spices.
- Add the chopped tomatoes and vegetable broth to the pot. Season with salt and pepper, then bring the mixture to a boil.
- Once boiling, reduce the heat to low and simmer for 30 minutes, allowing the vegetables to soften and the flavors to meld.
- While the vegetables are simmering, prepare the couscous according to the package instructions.
- Fluff the cooked couscous with a fork and divide it among serving plates. Ladle the vegetable mixture over the couscous and serve hot.
