Kozhi Biryani (chettinad Chicken Biryani)
Kozhi Biryani, also known as Chettinad Chicken Biryani, is a flavorful and aromatic dish from the Chettinad region of Tamil Nadu, India. This biryani is known for its unique blend of spices and the use of seeraga samba rice, which gives it a distinct taste and texture.
Ingredients
- 500g chicken, cut into pieces
- 2 cups seeraga samba rice
- 1 cup yogurt
- 2 onions, thinly sliced
- 3 tomatoes, chopped
- 4 green chilies, slit
- 1/4 cup chopped mint leaves
- 1/4 cup chopped coriander leaves
- 1/2 cup oil
- 1/4 cup ghee
- 2 cinnamon sticks
- 4 cardamom pods
- 6 cloves
- 1 teaspoon fennel seeds
- 2 teaspoons ginger-garlic paste
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 2 teaspoons biryani masala
- Salt to taste
- 4 cups water
Instructions
- Wash and soak the seeraga samba rice in water for 30 minutes. Drain and set aside.
- Marinate the chicken pieces with yogurt, turmeric powder, red chili powder, biryani masala, and salt. Let it marinate for 30 minutes.
- Heat oil and ghee in a large pot. Add cinnamon sticks, cardamom pods, cloves, and fennel seeds. Sauté until fragrant.
- Add the sliced onions and sauté until golden brown.
- Stir in the ginger-garlic paste and green chilies. Cook for 2 minutes.
- Add the chopped tomatoes and cook until they turn mushy.
- Add the marinated chicken and cook for 5 minutes.
- Layer the soaked rice over the chicken. Add mint leaves and coriander leaves.
- Pour water over the rice. Cover and cook on low heat until the rice is done and the chicken is cooked through.
- Once done, gently fluff the biryani with a fork and serve hot.
