Ingredients

  • 1 kg chicken, cut into pieces
  • 2 onions, finely chopped
  • 3 tomatoes, pureed
  • 1/4 cup grated coconut
  • 1/4 cup cashew nuts
  • 1 tbsp ginger-garlic paste
  • 1 tbsp fennel seeds
  • 1 tbsp coriander seeds
  • 1 tbsp cumin seeds
  • 1 tbsp black peppercorns
  • 1/2 tbsp turmeric powder
  • 1/2 tbsp red chili powder
  • 1/2 tbsp garam masala
  • 1/4 cup oil
  • Fresh curry leaves
  • Salt to taste

Instructions

  1. Dry roast fennel seeds, coriander seeds, cumin seeds, and black peppercorns. Grind them to a fine powder.
  2. Grind grated coconut and cashew nuts to a smooth paste.
  3. Heat oil in a pan, add chopped onions, and sauté until golden brown.
  4. Add ginger-garlic paste and sauté for a few minutes.
  5. Add the ground spice powder, turmeric powder, and red chili powder. Cook for a couple of minutes.
  6. Add the chicken pieces and cook until they are sealed and browned.
  7. Pour in the tomato puree and cook until the oil separates.
  8. Add the coconut-cashew paste, garam masala, and salt. Mix well and cook for another 10-15 minutes.
  9. Garnish with fresh curry leaves and serve hot.
