Ingredients
- 3 cups cornmeal
- 1 cup cassava dough
- 1 onion, chopped
- 2 tomatoes, chopped
- 1 cup okra, sliced
- 1 cup spinach, chopped
- 1 cup palm oil
- 1 smoked fish, deboned and flaked
- 1 tsp salt
- 1 tsp ground pepper
- 6 cups water
Instructions
- In a large pot, combine the cornmeal, cassava dough, and water. Mix well to form a smooth paste.
- Add the chopped onion, tomatoes, okra, and spinach to the pot.
- Stir in the palm oil, smoked fish, salt, and ground pepper.
- Cover the pot and cook over medium heat for 1 hour, stirring occasionally to prevent sticking.
- Once the kpokpoi is thick and fully cooked, remove from heat and let it cool slightly before serving.
