Ingredients

  • 3 cups cornmeal
  • 1 cup cassava dough
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 1 cup okra, sliced
  • 1 cup spinach, chopped
  • 1 cup palm oil
  • 1 smoked fish, deboned and flaked
  • 1 tsp salt
  • 1 tsp ground pepper
  • 6 cups water

Instructions

  1. In a large pot, combine the cornmeal, cassava dough, and water. Mix well to form a smooth paste.
  2. Add the chopped onion, tomatoes, okra, and spinach to the pot.
  3. Stir in the palm oil, smoked fish, salt, and ground pepper.
  4. Cover the pot and cook over medium heat for 1 hour, stirring occasionally to prevent sticking.
  5. Once the kpokpoi is thick and fully cooked, remove from heat and let it cool slightly before serving.
