Ingredients

  • 4 cups corn dough
  • 1 cup cassava dough
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 1 cup spinach, chopped
  • 1/2 cup palm oil
  • 2 cups water
  • Salt to taste

Instructions

  1. In a large pot, combine the corn dough, cassava dough, and water. Mix well to form a smooth, thick paste.
  2. Add the chopped onion, tomatoes, and spinach to the pot. Stir to combine.
  3. Cover the pot and cook over medium heat for 45 minutes, stirring occasionally.
  4. Add the palm oil and salt to the pot. Stir well and continue cooking for an additional 15 minutes.
  5. Remove from heat and allow the Kpokpoi to cool slightly before serving.
