Kremasta Gljiva Supa (creamy Mushroom Soup)

Ingredients

  • 500g fresh mushrooms, sliced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the chopped onion and garlic, and sauté until softened.
  3. Add the sliced mushrooms and cook until they release their liquid and become tender.
  4. Pour in the vegetable broth and bring the soup to a simmer.
  5. Let it simmer for 15-20 minutes, then stir in the heavy cream.
  6. Season with salt and pepper to taste.
  7. Simmer for an additional 5 minutes, then remove from heat.
  8. Using an immersion blender, blend the soup until smooth and creamy.
  9. Serve hot, garnished with a drizzle of cream and a sprinkle of chopped parsley.
