Kremmudopita (greek-style Stuffed Onions)

Ingredients
- 6 large onions, peeled and hollowed
- 1 cup rice
- 1/2 cup chopped fresh parsley
- 1/4 cup chopped fresh dill
- 1/4 cup olive oil
- 1/4 cup pine nuts
- 1/4 cup currants
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cinnamon
- Salt and pepper to taste
- 2 cups vegetable broth
- 1 can (14 oz) diced tomatoes
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, mix together the rice, parsley, dill, olive oil, pine nuts, currants, oregano, cinnamon, salt, and pepper.
- Stuff the hollowed onions with the rice mixture and place them in a deep pot.
- Pour the vegetable broth and diced tomatoes over the stuffed onions.
- Cover the pot and cook on the stovetop over medium heat for 1 hour, or until the onions are tender and the rice is cooked.
- Serve the Kremmudopita hot, garnished with fresh herbs if desired.
