Kremmudopita (greek-style Stuffed Onions)

Ingredients

  • 6 large onions, peeled and hollowed
  • 1 cup rice
  • 1/2 cup chopped fresh parsley
  • 1/4 cup chopped fresh dill
  • 1/4 cup olive oil
  • 1/4 cup pine nuts
  • 1/4 cup currants
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cinnamon
  • Salt and pepper to taste
  • 2 cups vegetable broth
  • 1 can (14 oz) diced tomatoes

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix together the rice, parsley, dill, olive oil, pine nuts, currants, oregano, cinnamon, salt, and pepper.
  3. Stuff the hollowed onions with the rice mixture and place them in a deep pot.
  4. Pour the vegetable broth and diced tomatoes over the stuffed onions.
  5. Cover the pot and cook on the stovetop over medium heat for 1 hour, or until the onions are tender and the rice is cooked.
  6. Serve the Kremmudopita hot, garnished with fresh herbs if desired.
