Ingredients
- 1 lb conch, cleaned and diced
- 2 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 2 tomatoes, chopped
- 1 cup coconut milk
- 4 cups fish or vegetable broth
- 1 tsp thyme
- Salt and pepper to taste
- Hot sauce (optional)
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the onion, garlic, and bell pepper. Sauté until the vegetables are soft.
- Add the diced conch and cook for 5 minutes.
- Pour in the coconut milk and fish or vegetable broth. Add the tomatoes, thyme, salt, and pepper.
- Simmer for 45 minutes, stirring occasionally.
- Taste and adjust seasoning, adding hot sauce if desired.
- Serve hot and enjoy!
