Ingredients
- 2 cups fresh corn kernels
- 1/2 cup all-purpose flour

- 1/2 teaspoon dried thyme
- 1/4 teaspoon cayenne pepper

Instructions
- In a large bowl, combine the fresh corn, flour, bell pepper, onion, garlic, paprika, thyme, cayenne pepper, salt, and black pepper.
- Stir in the beaten eggs until the mixture is well combined.
- Heat vegetable oil in a large skillet over medium heat.
- Drop spoonfuls of the corn mixture into the hot oil and flatten slightly with the back of the spoon.
- Cook the fritters for 3-4 minutes on each side, or until golden brown and crispy.
- Remove the fritters from the skillet and drain on paper towels.
