  • 2 eggs, beaten

Instructions

  1. In a large bowl, combine the fresh corn, flour, bell pepper, onion, garlic, paprika, thyme, cayenne pepper, salt, and black pepper.
  2. Stir in the beaten eggs until the mixture is well combined.
  3. Heat vegetable oil in a large skillet over medium heat.

  5. Cook the fritters for 3-4 minutes on each side, or until golden brown and crispy.
