Kribi Spicy Prawn Jambalaya

Ingredients
- 1 lb prawns, peeled and deveined
- 2 cups long-grain white rice
- 1 onion, diced
- 1 bell pepper, diced
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 3 cups chicken or seafood broth
- 2 tsp paprika
- 1 tsp cayenne pepper
- 1 tsp thyme
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onion, bell pepper, and garlic. Cook until the vegetables are softened.
- Add the rice to the pot and stir to coat with the vegetables and oil.
- Pour in the diced tomatoes and broth. Add the paprika, cayenne pepper, thyme, salt, and pepper. Stir to combine.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 20 minutes.
- After 20 minutes, add the prawns to the pot and stir to combine. Cover and cook for an additional 10-15 minutes, or until the prawns are cooked through and the rice is tender.
- Remove from heat and let the jambalaya sit for 5 minutes before fluffing with a fork.
