Ingredients

  • 2 cups cooked meat (beef, chicken, or veal), finely chopped
  • 1 onion, finely chopped
  • 2 cups beef or chicken broth
  • 1/2 cup butter
  • 1/2 cup all-purpose flour
  • 1/4 cup milk
  • 1/4 cup mixed vegetables (carrots, peas, corn)
  • 1/2 tsp nutmeg
  • Salt and pepper to taste
  • 2 eggs, beaten
  • 2 cups breadcrumbs
  • Vegetable oil for frying

Instructions

  1. In a saucepan, sauté the onion in butter until translucent.
  2. Add the flour and cook for 2 minutes, stirring constantly.
  3. Gradually add the broth and milk, stirring until smooth and thickened.
  4. Add the meat, vegetables, nutmeg, salt, and pepper. Cook for 5 minutes, then let the mixture cool.
  5. Shape the mixture into croquettes, dip each in beaten egg, then coat with breadcrumbs.
  6. Heat the oil in a deep fryer or heavy-bottomed pot to 375°F (190°C).
  7. Fry the croquettes in batches for 3-4 minutes, until golden brown and crispy.
  8. Remove and drain on paper towels before serving.
