Krumkake

Krumkake is a traditional Norwegian waffle cookie that is often made during the Christmas season. These delicate, crispy treats are rolled into a cone shape and filled with whipped cream or other sweet fillings.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 cup heavy cream, for filling (optional)

Instructions

  1. In a large mixing bowl, whisk together the flour and sugar.
  2. Add the melted butter, vanilla extract, and eggs to the dry ingredients, and mix until smooth.
  3. Preheat the krumkake iron on the stovetop over medium heat.
  4. Place a spoonful of batter onto the center of the iron, close the lid, and cook for about 30 seconds or until golden brown.
  5. Quickly remove the cookie from the iron and roll it into a cone shape using a cone-shaped mold or the handle of a wooden spoon.
  6. Allow the krumkake to cool and crisp up before serving.
  7. Optional: Fill the krumkake cones with whipped cream or other desired fillings before serving.
