Kseksou (algerian Couscous With Vegetables)
Kseksou is a traditional Algerian dish made with fluffy couscous and a variety of colorful vegetables. This hearty and flavorful dish is perfect for a cozy family dinner or a gathering with friends.
Ingredients
- 2 cups couscous
- 1 onion, chopped
- 2 carrots, sliced
- 1 zucchini, diced
- 1 bell pepper, chopped
- 1 cup green peas
- 4 tomatoes, diced
- 3 cloves garlic, minced
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 4 cups vegetable broth
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until they are soft and fragrant.
- Add the carrots, zucchini, bell pepper, and green peas to the pot. Cook for 5 minutes, stirring occasionally.
- Stir in the diced tomatoes, ground turmeric, ground cumin, paprika, salt, and pepper. Cook for another 5 minutes.
- Pour the vegetable broth into the pot and bring it to a boil.
- Once the broth is boiling, add the couscous to the pot and stir well. Cover the pot and remove it from the heat. Let it sit for 10 minutes to allow the couscous to absorb the liquid.
- Fluff the couscous with a fork to separate the grains. Serve the kseksou hot and enjoy!
