Ingredients

  • 1 lb lamb, cut into chunks
  • 2 onions, chopped
  • 3 carrots, sliced
  • 2 zucchinis, diced
  • 1 bell pepper, chopped
  • 1 cup chickpeas, cooked
  • 2 tomatoes, diced
  • 2 cups couscous
  • 3 cups chicken broth
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • Salt and pepper to taste

Instructions

  1. Season the lamb chunks with salt, pepper, cumin, coriander, and turmeric.
  2. Heat olive oil in a large pot over medium heat. Add the seasoned lamb and cook until browned on all sides.
  3. Add the chopped onions and cook until softened.
  4. Stir in the carrots, zucchinis, bell pepper, and chickpeas. Cook for 5 minutes.
  5. Add the diced tomatoes and chicken broth. Bring to a boil, then reduce heat and simmer for 45 minutes.
  6. Meanwhile, prepare the couscous according to package instructions.
