Ingredients
- 1 lb lamb, cut into chunks
- 2 onions, chopped
- 3 carrots, sliced
- 2 zucchinis, diced
- 1 bell pepper, chopped
- 1 cup chickpeas, cooked
- 2 tomatoes, diced
- 2 cups couscous
- 3 cups chicken broth
- 2 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- Salt and pepper to taste
Instructions
- Season the lamb chunks with salt, pepper, cumin, coriander, and turmeric.
- Heat olive oil in a large pot over medium heat. Add the seasoned lamb and cook until browned on all sides.
- Add the chopped onions and cook until softened.
- Stir in the carrots, zucchinis, bell pepper, and chickpeas. Cook for 5 minutes.
- Add the diced tomatoes and chicken broth. Bring to a boil, then reduce heat and simmer for 45 minutes.
- Meanwhile, prepare the couscous according to package instructions.
- Fluff the couscous with a fork and serve with the lamb and vegetable stew on top.
