Ingredients
- 2 cups all-purpose flour
- 4 eggs
- 1/2 cup milk
- 1/2 tsp salt
- 1/4 tsp nutmeg
- 1 cup grated Emmental cheese
- 1 cup grated Gruyère cheese
- 1/2 cup butter
- 2 large onions, thinly sliced
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine the flour, eggs, milk, salt, and nutmeg to form a smooth, thick batter.
- Bring a large pot of salted water to a boil. Using a spaetzle maker or a colander with large holes, press the batter through the holes directly into the boiling water.
- Cook the spätzle for 2-3 minutes or until they float to the surface, then remove them with a slotted spoon and transfer to a large bowl.
- Preheat the oven to 350°F (175°C).
- Layer half of the spätzle in a greased baking dish and sprinkle half of the grated Emmental and Gruyère cheese on top. Repeat with the remaining spätzle and cheese.
- In a skillet, melt the butter over medium heat and add the sliced onions. Cook, stirring occasionally, until the onions are golden and crispy. Season with salt and pepper.
- Sprinkle the crispy onions over the top of the cheese and spätzle mixture.
- Bake for 20-25 minutes or until the cheese is melted and bubbly.
