Ingredients

  • 2 cups all-purpose flour
  • 4 eggs
  • 1/2 cup milk
  • 1/2 tsp salt
  • 3 large onions, thinly sliced
  • 1/4 cup butter
  • 2 cups grated Emmental cheese
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix the flour, eggs, milk, and salt to form a smooth, thick batter.
  2. Bring a large pot of salted water to a boil. Using a spaetzle maker or a colander with large holes, press the batter through the holes directly into the boiling water.
  3. Cook the spaetzle for 2-3 minutes or until they float to the surface, then remove them with a slotted spoon and transfer to a greased baking dish.
  4. In a large skillet, melt the butter over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown.
  5. Spread the caramelized onions over the spaetzle in the baking dish, then sprinkle the grated cheese on top.
  6. Place the baking dish in the oven and bake at 350°F (175°C) for 20-25 minutes, or until the cheese is melted and bubbly.
  7. Season with salt and pepper to taste before serving.
