Ingredients
- 2 cups all-purpose flour
- 4 eggs
- 1/2 cup milk
- 1/2 tsp salt
- 1/4 tsp nutmeg
- 1 cup grated Emmental cheese
- 1/2 cup grated Gruyère cheese
- 1/4 cup butter
- 1 large onion, thinly sliced
Instructions
- In a large bowl, mix together the flour, eggs, milk, salt, and nutmeg to form a smooth batter.
- Bring a large pot of salted water to a boil. Using a spaetzle maker or a colander with large holes, press the batter into the boiling water to form small dumplings.
- Cook the spätzle for 2-3 minutes or until they float to the surface, then remove them with a slotted spoon and transfer to a colander to drain.
- In a large skillet, melt the butter over medium heat. Add the sliced onion and cook until golden and caramelized.
- Add the cooked spätzle to the skillet with the onions and toss to combine.
- Sprinkle the grated Emmental and Gruyère cheese over the spätzle and stir until the cheese is melted and the spätzle is coated.
- Season with salt and pepper to taste, then serve hot.
