Ingredients

  • 2 cups all-purpose flour
  • 4 eggs
  • 1/2 cup milk
  • 1/2 tsp salt
  • 1/4 tsp nutmeg
  • 1 cup grated Emmental cheese
  • 1/2 cup grated Gruyère cheese
  • 1/4 cup butter
  • 1 large onion, thinly sliced

Instructions

  1. In a large bowl, mix together the flour, eggs, milk, salt, and nutmeg to form a smooth batter.
  2. Bring a large pot of salted water to a boil. Using a spaetzle maker or a colander with large holes, press the batter into the boiling water to form small dumplings.
  3. Cook the spätzle for 2-3 minutes or until they float to the surface, then remove them with a slotted spoon and transfer to a colander to drain.
  4. In a large skillet, melt the butter over medium heat. Add the sliced onion and cook until golden and caramelized.
  5. Add the cooked spätzle to the skillet with the onions and toss to combine.
  6. Sprinkle the grated Emmental and Gruyère cheese over the spätzle and stir until the cheese is melted and the spätzle is coated.
  7. Season with salt and pepper to taste, then serve hot.
