Ingredients

  • 4 eggs

  • 2 large onions, thinly sliced
  • 2 cups grated Emmental cheese

Instructions

  1. In a large bowl, mix the flour, eggs, milk, salt, and nutmeg to form a smooth, thick batter.
  2. Bring a large pot of salted water to a boil. Using a spaetzle maker or a colander with large holes, press the batter into the boiling water to form small noodles. Cook for 2-3 minutes, then drain and set aside.
  3. In a large skillet, melt the butter over medium heat. Add the sliced onions and cook, stirring occasionally, until golden and caramelized.
  4. Preheat the oven to 375°F (190°C). In a greased casserole dish, layer half of the cooked spaetzle, half of the caramelized onions, and half of the grated cheese. Repeat the layers with the remaining ingredients.
  5. Bake the casserole for 20-25 minutes, or until the cheese is melted and bubbly.
