Ingredients

  • 1 lb beef sirloin, thinly sliced
  • 8 cups beef broth
  • 8 oz rice noodles
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, sliced
  • 2 tbsp fish sauce
  • 1 tbsp soy sauce
  • 1 tsp sugar
  • 1/2 tsp black pepper
  • 4 green onions, chopped
  • Bean sprouts, cilantro, and lime wedges for garnish

Instructions

  1. In a pot, heat the vegetable oil over medium heat. Add the garlic and ginger, and sauté until fragrant.
  2. Add the beef slices and cook until browned.
  3. Pour in the beef broth and bring to a boil. Reduce heat and let it simmer for 30 minutes.
  4. Meanwhile, cook the rice noodles according to the package instructions.
  5. Season the broth with fish sauce, soy sauce, sugar, and black pepper.
  6. Divide the cooked noodles into serving bowls and ladle the beef broth over the noodles.
  7. Garnish with green onions, bean sprouts, cilantro, and a squeeze of lime juice.
