Ingredients

  • 1 lb ground beef
  • 1 cup fine bulgur
  • 1 onion, finely chopped
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground turmeric
  • 1/4 tsp cayenne pepper
  • 2 cups tomato sauce
  • 4 cups chicken or vegetable broth
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix together the ground beef, bulgur, onion, cumin, coriander, turmeric, cayenne pepper, salt, and pepper until well combined.
  2. Form the meat mixture into small balls, about 1 inch in diameter.
  3. In a large pot, combine the tomato sauce and broth and bring to a simmer over medium heat.
  4. Gently drop the meatballs into the simmering sauce and cook for 30-35 minutes, or until the meatballs are cooked through.
  5. Sprinkle the chopped parsley over the meatballs and sauce before serving.
