Kubdari (eggplant And Tomato Casserole)
Kubdari is a traditional Circassian dish that features layers of eggplant and tomato, creating a flavorful and hearty casserole. This dish is perfect for a cozy family dinner or a gathering with friends.
Ingredients
- 2 large eggplants, sliced
- 4 tomatoes, sliced
- 1 onion, thinly sliced
- 2 garlic cloves, minced
- 1/4 cup olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 cup shredded mozzarella cheese
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the sliced eggplants and cook until they are golden brown on both sides. Remove from the skillet and set aside.
- In the same skillet, add the sliced onions and minced garlic. Sauté until the onions are soft and translucent.
- Layer half of the cooked eggplant slices in a casserole dish. Top with half of the sliced tomatoes and half of the sautéed onions and garlic. Sprinkle with half of the salt, black pepper, and paprika.
- Repeat the layers with the remaining eggplant, tomatoes, onions, garlic, salt, black pepper, and paprika.
- Sprinkle the shredded mozzarella cheese over the top of the casserole.
- Cover the casserole dish with foil and bake in the preheated oven for 30 minutes. Then, remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
- Remove from the oven and let it cool for a few minutes before serving.
