Kuchmachi Delight (კუჭმაჩი)

Ingredients

  • 1 lb chicken livers
  • 1 large onion, finely chopped
  • 1/2 cup walnuts, finely chopped
  • 1/4 cup pomegranate seeds
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Add the chicken livers to the skillet and cook until they are no longer pink in the center.
  4. Once the livers are cooked, remove them from the skillet and let them cool.
  5. Once cooled, chop the livers into small pieces.
  6. In a large bowl, combine the chopped livers, onions, walnuts, pomegranate seeds, cilantro, and red wine vinegar.
  7. Season with salt and pepper to taste and mix well.
  8. Chill the kuchmachi in the refrigerator for at least 30 minutes before serving.
