Kudat Fish Soup

Ingredients

  • 500g fresh fish fillet, cut into chunks
  • 1 liter water
  • 2 tomatoes, diced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 inch ginger, sliced
  • 2 lemongrass stalks, smashed
  • 1 red chili, sliced
  • Salt to taste
  • Pepper to taste
  • Handful of fresh basil leaves

Instructions

  1. In a pot, bring the water to a boil.
  2. Add the tomatoes, onion, garlic, ginger, lemongrass, and chili. Simmer for 15 minutes.
  3. Add the fish chunks and cook for another 10 minutes or until the fish is cooked through.
  4. Season with salt and pepper to taste.
  5. Garnish with fresh basil leaves before serving.
