Kudat Mango Kerabu

Ingredients

  • 2 Kudat mangoes, peeled and julienned
  • 1 small red onion, thinly sliced
  • 1 red chili, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup roasted peanuts, crushed
  • 2 tablespoons fish sauce
  • 2 tablespoons lime juice
  • 1 tablespoon brown sugar

Instructions

  1. In a large bowl, combine the julienned mangoes, sliced red onion, and sliced red chili.
  2. Add the chopped cilantro, mint leaves, and crushed peanuts to the bowl.
  3. In a small bowl, whisk together the fish sauce, lime juice, and brown sugar to make the dressing.
  4. Pour the dressing over the mango mixture and toss gently to combine.
  5. Transfer the mango kerabu to a serving platter and serve immediately.
