Kudat Mango Pudding

Ingredients

  • 3 ripe mangoes, peeled and diced
  • 1/2 cup sugar
  • 1/4 cup water
  • 1/4 cup cornstarch
  • 1 1/2 cups coconut milk

Instructions

  1. In a blender, puree the diced mangoes until smooth.
  2. In a saucepan, combine the mango puree, sugar, and water. Cook over medium heat, stirring constantly, until the sugar is dissolved.
  3. In a small bowl, mix the cornstarch with a little water to create a slurry. Gradually pour the cornstarch slurry into the mango mixture, stirring constantly until the pudding thickens.
  4. Remove the saucepan from the heat and stir in the coconut milk until well combined.
  5. Pour the mango pudding into individual serving dishes and refrigerate for at least 2 hours until set.
  6. Serve the Kudat Mango Pudding chilled and enjoy!
