Kudat Mango Pudding

Ingredients
- 3 ripe mangoes, peeled and diced
- 1/2 cup sugar
- 1/4 cup water
- 1/4 cup cornstarch
- 1 1/2 cups coconut milk
Instructions
- In a blender, puree the diced mangoes until smooth.
- In a saucepan, combine the mango puree, sugar, and water. Cook over medium heat, stirring constantly, until the sugar is dissolved.
- In a small bowl, mix the cornstarch with a little water to create a slurry. Gradually pour the cornstarch slurry into the mango mixture, stirring constantly until the pudding thickens.
- Remove the saucepan from the heat and stir in the coconut milk until well combined.
- Pour the mango pudding into individual serving dishes and refrigerate for at least 2 hours until set.
- Serve the Kudat Mango Pudding chilled and enjoy!
