Kudla Kudlu (stuffed Banana Blossom Curry)

Ingredients
- 2 banana blossoms, cleaned and chopped
- 1 cup grated coconut
- 1 onion, finely chopped
- 2 green chilies, chopped
- 1 tsp ginger-garlic paste
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp cumin seeds
- 1/2 tsp mustard seeds
- 1/4 tsp asafoetida (hing)
- 1 sprig curry leaves
- 2 tbsp vegetable oil
- Salt to taste
Instructions
- Prepare the stuffing by mixing grated coconut, chopped onion, green chilies, ginger-garlic paste, coriander powder, and salt in a bowl.
- Take the cleaned and chopped banana blossoms and stuff them with the prepared mixture.
- Heat oil in a pan and add mustard seeds, cumin seeds, and asafoetida. Once the seeds splutter, add curry leaves and the stuffed banana blossoms.
- Add turmeric powder and salt to taste. Cook the stuffed banana blossoms on low heat for about 15-20 minutes, stirring occasionally.
- Once the banana blossoms are cooked, the Kudla Kudlu is ready to be served hot with steamed rice or roti.
