Kueh Chapati Twist
Kueh Chapati Twist is a delightful Bruneian dish that puts a unique spin on the traditional chapati. This recipe combines the flavors of Bruneian cuisine with the classic chapati bread, resulting in a delicious and satisfying meal.
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 tablespoon vegetable oil
- 3/4 cup water
- 1 tablespoon ghee
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- 1 cup canned chickpeas, drained and rinsed
- 1 cup coconut milk
- Salt to taste
- Fresh cilantro for garnish
Instructions
- In a large bowl, mix the all-purpose flour and salt. Add the vegetable oil and water, then knead the dough until smooth. Cover and let it rest for 20 minutes.
- Divide the dough into 8 equal portions and roll each portion into a ball. Roll out each ball into a thin circle.
- Heat a non-stick pan over medium heat and cook each chapati for about 1 minute on each side, or until golden brown spots appear. Set aside.
- In a separate pan, heat the ghee over medium heat. Add the chopped onion and cook until softened. Add the garlic, ground cumin, ground coriander, turmeric, and cayenne pepper. Cook for 1-2 minutes.
- Add the chickpeas and coconut milk. Simmer for 5-7 minutes, then season with salt.
- Serve the chapati with the chickpea curry, garnished with fresh cilantro.
