Ingredients

  • 1 lb ground lamb
  • 1 small onion, finely chopped

  • 1/2 tsp ground coriander
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 can (14 oz) crushed tomatoes
  • 1/2 cup chicken or vegetable broth
  • 2 tbsp tomato paste
  • 1 tsp sugar
  • Fresh parsley for garnish

Instructions

  1. In a large bowl, combine the ground lamb, chopped onion, minced garlic, breadcrumbs, cumin, coriander, paprika, salt, and pepper. Mix until well combined, then shape the mixture into meatballs.
  2. Heat the olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 8-10 minutes. Remove the meatballs from the skillet and set aside.
  3. In the same skillet, add the crushed tomatoes, broth, tomato paste, and sugar. Stir to combine, then return the meatballs to the skillet, spooning the sauce over them.
  4. Simmer the meatballs in the sauce for 20-25 minutes, or until the meatballs are cooked through and the sauce has thickened.
  5. Once cooked, garnish the meatballs with fresh parsley and serve hot.
