Kufta (circassian Style Meatballs In Tomato Sauce)
Kufta is a traditional Circassian dish consisting of flavorful meatballs in a rich tomato sauce. This recipe brings together the bold flavors of the Caucasus region and is perfect for a comforting family meal.
Ingredients
- 1 lb ground beef
- 1 onion, finely chopped
- 1/2 cup breadcrumbs
- 1 egg
- 1/4 cup parsley, chopped
- 1 tsp cumin
- 1/2 tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 1 can (14 oz) crushed tomatoes
- 1/2 cup chicken or beef broth
- 1 tsp sugar
Instructions
- In a large bowl, mix together the ground beef, onion, breadcrumbs, egg, parsley, cumin, paprika, salt, and pepper. Form the mixture into small meatballs.
- Heat the olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides. Remove from the skillet and set aside.
- In the same skillet, sauté the garlic for 1-2 minutes. Add the crushed tomatoes, broth, and sugar. Bring to a simmer.
- Return the meatballs to the skillet, cover, and let simmer for 15-20 minutes, or until the meatballs are cooked through and the sauce has thickened.
- Serve the kufta hot, garnished with additional parsley if desired.
