Kuih Dadar Delight is a popular sweet treat in Malay cuisine, made with pandan-infused crepes filled with a sweet coconut and palm sugar filling. This delightful dessert is perfect for satisfying your sweet cravings!
Ingredients
- 4 pandan leaves, blended with 200ml water
- 150g all-purpose flour
- 2 eggs
- 200ml coconut milk
- 1/4 tsp salt
- 100g palm sugar
- 100g grated coconut
- 1/4 tsp pandan essence
- 1/4 tsp salt
- 1 pandan leaf, knotted
Instructions
- In a bowl, mix pandan juice, all-purpose flour, eggs, coconut milk, and salt to make the crepe batter.
- Heat a non-stick pan over medium heat and pour a ladle of batter into the pan, swirling to coat the bottom evenly. Cook until the edges start to lift, then flip and cook the other side. Repeat with the remaining batter.
- For the filling, combine palm sugar, grated coconut, pandan essence, and salt in a pan. Cook over low heat until the sugar melts and the mixture is slightly dry.
- Place a spoonful of the filling in the center of each crepe, fold the sides, and roll it up into a neat parcel.
