Ingredients

  • 1 cup rice flour
  • 1 cup coconut milk
  • 1/2 cup water
  • 1/2 cup sugar
  • 1/4 tsp salt
  • 1/2 tsp pandan extract
  • 1/4 cup tapioca flour
  • Green food coloring (optional)

Instructions

  1. In a bowl, mix rice flour, coconut milk, water, sugar, and salt until well combined.
  2. Pour half of the mixture into a greased 8-inch square pan and steam for 10 minutes.
  3. Add pandan extract and tapioca flour to the remaining mixture and mix well. Add green food coloring if desired.
  4. Pour the pandan mixture over the cooked first layer and steam for another 15-20 minutes until set.
  5. Let it cool before cutting into pieces and serving.
